Strawberry, Cucumber & Mint Smoothie



Bright summer mornings make me crave sweet and creamy smoothies! Today was one of those… In this smoothie the cucumber and mint make it light, refreshing and hydrating, the strawberries and banana provide a delicious sweetness and the almond butter and coconut provide a yummy creamy texture. I’m suffering at the moment from bad post exertional malaise so I needed something packed with nutrients which this is – the almonds and coconut are great brain foods and contain wonderful fats and the cucumber is alkalising and packed with antioxidants.


– 1 frozen banana

– 1 1/2 cups of strawberries with tops removed

– 1/4 cucumber

– 1 tsp mint leaves

– 1 heaped tsp almond butter (I used Meridian Foods)

– 100ml coconut milk

– ice


Add all of the ingredients to a high powered blender and process until combined and smooth. Serve and enjoy :)

    When I was in Thailand, I practically lived off smoothies! I’d never really had many before but now I’m in love with them :) I definitely think I’m going to get a smoothie maker so I can try recipes like these out because they look delicious! xx

      They are soooo good aren’t they?! I have one almost every morning for an instant energy boost! You should invest in a smoothie maker, I’d highly recommend the Nutribullet :)

    I love this smoothie idea! I never thought of putting cucumber and strawberries in a smoothie together but I will definitely give this a try (I will just skip mint, as I don’t like it). And I bought Meridan almond butter only today from Holland and Barrett to try it out after some bloggers said they like it. We’ll see how my smoothie turns out at the end!
