This delicious, chunky and nutritious soup is the perfect winter comfort food! It’s a special recipe for me as I’ve been eating this soup since I was young. Mum would always make it on a Sunday evening when I came in from a long swimming training session to warm and fill me up! I used to add in mini cooked pasta shells and dip cheddar cheese into it. It has always been one of my favourite meals and my family’s too!
I made this soup this week in order to further test out my new kitchen toy – The Optimum Thermocook from Froothie UK! I have been an ambassador for Froothie for about 9 months now and I was extremely excited when I was asked if I’d like to review their newest gadget, the Thermocook! The Optimum Thermocook has over 20 functions which means it can replace many of your existing kitchen gadgets – you’ll no longer need to fill your cupboards or worktops with a bread maker, blender, steamer, mincer etc. Here’s just a selection of its wide range of functions…
My Thermocook has quickly become my handy kitchen assistant – I use it for making smoothies in the morning, soups for lunch, and a whole array of different meals for dinner – and even cakes! The easy to read display gives you full control of the cooking process: It has a handy timer that you can set from 1 second to 12 hours, you can adjust the temperature from 37-120C and change the speed of the beater/whisker/kneader (it has 10 speed levels in total). Or, if you prefer, you can let the Thermocook do the thinking, using the built-in auto programmes including: Smoothie, Quick Soup, Chop, Saute, Stir, Steam, Stew, etc. I think its a really great piece of kit to have, especially if you lead a busy life and have little time to cook or if have a chronic illness which leaves you too tired – it does almost everything for you. For instance, when making a soup, it chops the veggies for you, sautés them without you even lifting a spoon to stir, and then cooks the soup at the optimum temperature for you! I love it because it reduces the amount of energy needed for cooking! I haven’t tried all of the functions out, in fact I have only touched the surface, but I am very impressed so far and I am feeling rather excited about finding out what else it is capable of! The only slight downside to the cooking process is that you sometimes need to change the blade to the kneading paddle if you go from chopping the vegetables to cooking them like you would do with soups. This involves emptying the contents of the jug into a separate container and swapping the blade for the paddle and then re-adding the contents. The end result is well worth it though.
The Thermocook is easy to clean and use. It comes with a recipe book with lots of delicious recipes to try and a detailed manual. I made some sweet potato brownies in mine (recipe from Deliciously Ella) and it did such a great job! I steamed the sweet potato first in the small 2.6 litre steamer (there is also a larger one that holds 3 litres) using the auto programme ‘steam,’ and they were perfectly cooked. I then used the blades to blend the sweet potato with the dates which I then added to the rest of my ingredients in a separate bowl to mix and complete the batter.
One of my favourite things I’ve made in my Thermocook has been garlic mayonnaise. I’ve never made mayonnaise before and should really avoid shop-bought as it contains lots of preservatives. Making your own means you only a few good quality ingredients and thats it, and it tastes so much better – richer and creamier! I followed the instructions in the Thermocook recipe book to make this but added in three cloves of crushed garlic at the end. It was very simple to make and didn’t take long at all.
- 1 large white onion
- 3 garlic cloves
- 1/2 red chilli de-seeded
- 2 celery stalks
- 2 leeks
- Chopped mixed veg - whatever you have in the fridge (I used swede, carrots, butternut squash & red pepper)
- 1 medium sweet potato (cut into cubes)
- Roughly chop your onion, garlic, chilli, leeks and celery and add it to your Thermocook jug with the kneading paddle in.
- Select the auto programme 'saute' and leave until its completed.
- Add in your chopped mixed veg and vegetable stock and select the auto programme 'stir' and set the temperature to 100C. After 10 minutes, pause the programme and add in your sweet potato. Resume and leave it until the programme is completed. If the veggies need longer select 'stir' again and end the programme when the veggies are cooked. Enjoy :)
