This week is National Vegetarian Week (18th-24th May)…Woohoo! What better excuse to eat clean and green than this week?! So join me in swapping that bacon sarnie for a veggie burger, you won’t regret it
This year it’s all about sharing and enjoying delicious veggie food with your friends and family. Vegetarian food reaches far beyond salad and vegetables, it’s vibrant, delicious and super exciting, so you’re bound to want to share it with those close to you! (or maybe not if you’re enjoying it too much to share ;))
Hummus is one of my favourite veggie foods, I love it with absolutely everything so I’m sharing one of my recipes with you today to help get you started on veggie week. You could also try Roasted Butternut Squash, Lime & Chilli Soup, Sweet potato and tricolour quinoa burgers, Sweetcorn & chilli muffins, and Lime, Coriander & Chilli Hummus.
Fiery Chipotle Hummus
Ingredients
2 400g cans of chickpeas (when you drain, keep some of the chickpea juice)
4 tsp chipotle paste (less if you don’t like it too spicy)
1/3 cup extra virgin olive oil
Pink Himalayan salt and pepper to season,
2 large garlic cloves,
handful of fresh coriander,
3 tbsp chickpea water
Instructions
Add all of the ingredients to a blender and process until you reach the desired consistency. Add more oil if you find it’s too thick. You may need to stop and stir a couple of times during the blending process. Enjoy
