After a couple of weeks in cornwall, I am ready to detox my body and eat super healthily this week. Although I did eat healthily when I was down there, I was indulging a lot more than I normally would and had lots of treats (healthy treats ofc :)). To kick off the week I had this vibrant green smoothie yesterday morning to give me a boost. I am loving persimmons at the moment – they are one of my favourite early winter foods to use in smoothies. They are a good source of fiber, vitamin C and antioxidants. I added both spinach and avocado to give a little variety to this smoothie – and to boost the vitamin and mineral content.
Ingredients
1 persimmon,
1/2 orange,
2 handfuls of spinach,
1/2 frozen banana,
1 small avocado,
1 tsp Minvita Mulberry Powder,
1 cup coconut water.
Instructions
Chop all of the fruit and veg and add to a blender along with everything else. Blend until smooth, pour and drink

I love this smoothie, if only for the colour! I think I’ll keep this one in mind when autumn/winter comes to Australia, because it seems like the perfect way of cheering yourself up on a cold and gloomy day

This recipe sounds delicious. I am looking to drink green smoothies and have tried a couple of recipes that didn’t turn out too well. But I am sure I would love this.
