Gluten free Fudgey Chocolate Brownies

Gooey, nutty, fudgey and seriously chocolaty, these brownies are a total joy to eat! It’s taken me quite a few attempts to get the recipe just right but I think these are pretty close to my perfect healthy brownie! I wanted a brownie that’s has all the elements of your everyday brownie but with much less sugar, no dairy and gluten free, and these are exactly that! They are so easy to make with very few steps, so they are great for us spoonies who can’t spend hours baking. I often whip these up just before dinner so that we have something nice for pud! My dad, a very traditional ultra sweet sticky toffee pudding lover, who doesn’t really like a lot of the gluten free deserts I make, loves these!! He was even asking when I’ll be making another batch the other day :)

You need these brownies in your life – they are scrum-diddly-upmtious!

Ingredients

1 cup gluten free self-raising flour (I use Doves Farm)
1 cup almond flour/ground almonds,
1/2 tsp baking powder,
1/4 cup cocoa powder,
1/2 cup brown sugar,
1/2 cup almond milk or any other non-dairy milk (I use Alpro),
1 tsp vanilla essence,
1/2 cup coconut oil,
2 eggs,
Handful of chopped Walnuts,

Instructions

Preheat oven to gas Mark 5. Line a 9 inch square pan with parchment and grease all sides.

Add the dry ingredients to a food processor and process (flours, cocoa, baking powder and sugar).

In a small bowl whisk the eggs and vanilla.

Melt the coconut oil in a pan over a low gentle heat until it’s completely liquid.

Pour the melted coconut oil over the dry mixture and process. Then add in the egg mixture and milk and pulse until a smooth gooey batter forms.

Now fold in 1/2 of the chopped walnuts.

Scoop the batter into your prepared tin (I’d suggest saving a little so you can ‘lick the bowl’ – this raw batter tastes incredible!!). Spread evenly. Sprinkle the remaining walnuts over the top.

Bake for 25 minutes and allow brownies to cool in the tin. After an hour or so, gently separate edge of brownie from tin with a butter knife and place on a cooling rack. Cool completely and slice carefully.
