Yesterday I made the best pancakes – Beetroot Buckwheat Pancakes!! They were delicious and the colour was absolutely beautiful. We had some beetroot left (yey!) so I made this smoothie out of it this morning. I think I mentioned in my Beet & Walnut Hummus recipe that I never used to like beets – my parents have always bought beet in a jar in vinegar, Blegh?! But when I tried fresh beet in hummus I fell in love with it and haven’t looked back since.
This pretty pink smoothie is the perfect way to start your day. I’d never tried this combination before but it was so refreshing and tasty; sweet beetroot and berries with an zingy orange kick! It lasted less than a minute! Beets contain potassium, magnesium, iron, vitamins A, B6 and C, folic acid, carbohydrates and protein so they are incredibly healthy and guaranteed to give you a morning energy boost! Acai is a superfood powder and also gives you a big boost…It is rich in essential fatty acids omega-3-6 and has been shown to reduce cholesterol. This is the perfect drink if you feeling under the weather which I definitely am at the moment.
1 medium fresh cooked beetroot,
1 cup fresh or frozen mixed berries,
1 large fresh orange, sectioned
3/4 cup coconut milk,
Add all of the ingredients to a blender/food processor (I used a Nutribullet) and process until smooth and creamy. Add more coconut milk or water to get your desired thickness. Pop in a straw and enjoy!
