Last week was a very tough one symptom wise, and when I have a week like that I like to feed my body everything it needs to regain strength, no nasties! By Friday I was feeling very low and really needed a superfood boost, and my favourite soup came to mind. This green soup is quick, easy, loaded with green veggies, and tastes absolutely scrumptious. Just throw everything in the pot, simmer, blend, and devour. What’s more it’s a colour sensation
1 large onion diced,
1 leek sliced,
2 cloves of garlic,
2 celery stalks sliced,
1 courgette (I used yellow) sliced,
1 green chilli – seeds in,
The florets of 1/2 head broccoli,
3 handfuls of spinach,
1 litre of veggie stock,
1 tsp dried mixed herbs,
Olive oil for frying,
Fresh coriander and some mixed seeds to serve.
Add the onion, leek, garlic, chilli, courgette, celery, and herbs to a large pan with the olive oil and cook on a medium heat for about fifteen minutes, stirring occasionally.
Pour over the vegetable stock and add the broccoli. Bring to the boil and then simmer for about 6-8 minutes or until the broccoli is soft. Season with pink Himalayan salt and pepper.
Add in the spinach and continue to cook for 2 minutes/until the spinach wilts. Take the pan off the heat.
Blend using a stick blender until the soup is smooth and creamy.
Top with some spicy seeds and fresh coriander leaves.
