Bright summer mornings make me crave sweet and creamy smoothies! Today was one of those… In this smoothie the cucumber and mint make it light, refreshing and hydrating, the strawberries and banana provide a delicious sweetness and the almond butter and coconut provide a yummy creamy texture. I’m suffering at the moment from bad post exertional malaise so I needed something packed with nutrients which this is – the almonds and coconut are great brain foods and contain wonderful fats and the cucumber is alkalising and packed with antioxidants.
– 1 frozen banana
– 1 1/2 cups of strawberries with tops removed
– 1/4 cucumber
– 1 tsp mint leaves
– 1 heaped tsp almond butter (I used Meridian Foods)
– 100ml coconut milk
Add all of the ingredients to a high powered blender and process until combined and smooth. Serve and enjoy
